辛凤姣 研究员

凤姣,女,1985年出生,博士,研究员,博士生导师,中国农业科学院农产品加工研究所食品酶工程创新团队首席科学家,院级青年英才。目前任Journal of agriculture and food chemistry杂志编委、北京食品学会青年工作委员会副主任等职务。2014年毕业于清华大学生命科学学院,获博士学位。主要通过X-ray、Cryo-EM等结构生物学及生化与分子生物学方法进行生物质定向酶解与转化、肠道菌群对食品组分的酶学转化机制、食品酶及功能强化食品开发等研究工作。五年来,以第一主持人主持国家及省部级项目6项,企业合作项目13项;发表SCI、核心论文20余篇,IF>102篇单篇最高影响因子12.221;申请发明专利10项,授权2项。

研究方向:食品科学;食品生物技术。
